A unique wine endeavor is the 2007 Empire ($21.95) produced by Hudson-Chatham Winery in Ghent, in the Hudson Valley. The owners wanted to create a wine that combined strengths of three different wine regions while capturing the diversity in growing environments, or terroirs, within New York state. The resulting wine blend takes cabernet franc from the Finger Lakes, merlot from the North Fork of Long Island and baco noir from the Hudson Valley. The wine has a predominant black cherry and pepper taste. It is fairly light in body with a fresh clean finish. The wine would pair well with turkey, salmon or pork chops.
