Chef Josephine of Local 111 Cooks It Up With Hudson-Chatham WIne

 
Chef Josephine from Local 111 in Philmont during one of the cooking demonstrations Memorial Day weekend at the Hudson-Berkshire Wine & Food Fest 2013! Chef Josephine is one of our favorite chefs. She makes terrific food. And of course she's been awesome about supporting LOCAL!!!



At the festival, she made a fantastic easy to make small salad with glazed diced kielbasa. It was an absolute hit!



 
Josephine Proul is the Executive Chef at Local 111 restaurant. Josephine is a committed advocate of cooking seasonally with locally grown food. A sixth generation Californian, Josephine has fond memories of childhood visits to her grandfather's cherry orchards in the Delta Region of California. She is a graduate of the New England Culinary Institute with a BA in Culinary Arts. Before joining the team at Local 111 she honed her skills in classic French charcuterie at Le Pichet in Seattle. A member of Slow Food, she is proud to be a supporter of the growing and flourishing agricultural community here in Columbia County.
